Our earliest and fondest memories are of food. We would wake up early in the morning to the aroma of oatmeal, besan chila, uttapams, ragi dosa, chole, khichdi, pulau or omelettes wafting up to our bedroom upstairs, while Mum cooked in the kitchen downstairs. School was a 30-minute drive from home and we had a working mum, so mornings were pretty frenetic in the kitchen. Breakfast, mid-morning snack, lunch and evening snack had to be prepared and packed before we all set out.
The 'where do I begin?" part of my culinary journey started way, way back in childhood, culminating in an offer to write a cookbook after my first health book, Kitchen Clinic: Good Health Always with Charmaine, was published in August 2013. Then, in 2014, once I had finished writing Blood Sugar Spice: Living with Diabetes, I thought I would set a deadline for completing the cookbook but couldn't do that that is, until now, when the coronavirus pandemic and the subsequent lockdown forced me to rethink the way I looked at life in general and food in particular. In His Time is a lovely hymn by Diane Ball that encourages us to trust God's timing for every situation in life. This has been my go-to hymn to listen to every so often. Afterall, He makes all things beautiful, in His time.
